Sage has a slightly bitter spiciness similar to pepper. It is used often to compliments fatty meats such as pork, duck, lamb & goose. As well as being an excellent addition to pasta sauce it is traditionally served as sage and onion stuffing, as an accompaniment to roast turkey or chicken at Christmas.
